Open Flame Grilling

Cook directly over flames from the wood fire.

Preparation

  • Cook food over open flames from the wood fire.

Grill Controls

Firing Up

  • Shut the grill lid.
  • With the grill powered on, press MENU, rotate to PRO MODES, press control knob select.
  • Rotate to Open Flame Grilling and press control knob to select.
  • Set to Low Flame or Turbo Flame depending on the heat required.

Shutting Down

  • Once finished cooking, safely shut the grill down by pressing MENU, selecting SHUT DOWN.

Temperature Range

  • Single target temperature of 240℃ / 464℉ as the goal is not high temperatures in the grill chamber, but rather taller flames that can reach up through the drip tray.
  • The temperature
  • A large wood pellet delivery and low fan speed allows the flames to rise up through the vents.

Cooking

  • Wait 5 minutes for the fire to build up and the drip tray and grill racks to get hot.
  • Open grill lid and open flame vent (pull handle) to flames can rise up through the vents.
  • Sear over the open flame.
  • Take care as flare-ups may occur.

Cleaning

  • Depending on how fatty the food being cooked was, there may be grease accumulated on the drip tray. This should be cleaned off before the next cook as it can release bad flavoured smoke, or cause a grease fire.
  • Clean the drip tray with hot soapy water, BBQ cleaning and a metal scraping blade, metal brush or scourer pad.
  • Jif, Bar Keepers Friend or similar kitchen cleaning powder/cream are safe to use.

Safety

  • Cooking over open flames has
  • Wait to cool down before removing, or use high temperature gloves when removing if still hot.
  • Do not put a hotplate that is still hot anywhere somebody (or a pet) could accidentally touch it.

FAQs

Can the hotplate be left in for other cooking modes?

  • Yes you can, in fact if doing indirect cooking, it helps provides more even temperatures and is much easier to clean up.
  • As it is a deep flat surface, it is perfect to lay a shallow water tray underneath meat (a common method).
  • The grill racks sit in place directly over the top.
  • Remove the left drip tray, but leave the right drip tray in place.

Can I open the flame vent (pull the handle out) for more heat?

  • Yes you can, and it will result in a very very hot zone above the fire ideal for searing.
  • Only open the flame vent once the hotplate is already up to temperature, as heating fast when cold can cause uneven heating and warping.
  • Beware this may actually be too hot for cooking anything other that a steak, so normally it is best to keep the vent closed.
