Cook directly over flames from the wood fire.
Preparation
- Keep both left and right drip trays in place
- Remove the cover off the left drip tray so the heat can rise up through the holes.
- Open the flame vent (or remove the heat baffle entirely for maximum possible heat).

Can the heat baffle be removed for open flame grilling? YES!
Grill Controls
Firing Up
- Shut the grill lid.
- With the grill powered on, press MENU, rotate to PRO MODES, press control knob select.
- Rotate to Open Flame Grilling and press control knob to select.
- Set to LOW FLAME and wait for the fire to be lit (2 to 3 minutes).

Cooking
- Wait for the grill to heat up to 80℃ / 176℉ at which point TURBO will also be available to select.
- Open the flame vent (pull handle) to allow flames to rise up through the vents.
- Change between LOW and TURBO flame as required by pressing the control knob, rotating to change and pressing again to confirm.
- Note the primary source of flames/flare ups above the drip tray level is from food grease dripping on the hot metal. Flames from the fire will not extend far up through the vents.
- Food can easily be overcooked or burnt, so constantly monitor and move around food as required.
- If the lid is left shut when using TURBO FLAME the temperature will quickly increase and once above 220℃ / 428℉ the controller will automatically switch back to LOW FLAME.
Shutting Down
- Once finished cooking, safely shut the grill down by pressing and holder POWER and selecting SHUT DOWN.
Cleaning
- Depending on how fatty the food being cooked was, there may be grease accumulated on the drip tray. This should be cleaned off before the next cook as it can release bad flavoured smoke, or cause a grease fire.
- Clean the drip tray with hot soapy water, BBQ cleaning and a metal scraping blade, metal brush or scourer pad.
- Jif, Bar Keepers Friend or similar kitchen cleaning powder/cream are safe to use.
Safety
- Cooking over open flames has risks of large flare ups and even a grease fire, so wear heat proof gloves and be cautious.
- Never leave the grill unattended when food is inside, especially if the lid is shut!
