Parts Overview
- 1. Pizza Oven (x1)
- 2. Cordierite Stone (x1)
- 3. Heat Deflector (x2)
- 4. Round Pizza Peel (x1)
- 5. Big Pizza Peel (x1)

Accessory Selection
- Before using for the first time, the Pizza Oven must be selected as YES in the accessory settings.
- With the grill powered on, press MENU, rotate to Accessories, press control knob select.
- Rotate to Pizza Oven, press to confirm, select YES, press again to confirm.

Preparation
- Remove the grill racks.
- Remove the left drip tray, leave the right drip tray in place.
- Insert a food temperature probe into the back of the pizza oven and plug into Probe 4 (P4) on the hopper panel. This will be used to measure and control the temperature.
- With the side heat deflectors off, lift the pizza oven into the centre of the grill.
- Hang the heat deflectors on the left and right sides. These help to direct the heat up into the pizza oven. The pizza oven may need to be slid slightly forwards or backward to fit the deflectors as they are a snug fit.
- Slide the pizza oven all the way to the left of the grill.
- Gently slide the pizza stone into the oven, avoiding scraping it against the metal edges.

Pizza Stone

- Easy to clean – just scrape off any food (do not wash)
Pizza Cooking Tips
Semolina Dusting
- Dust the pizza peel with semolina before placing on the pizza (especially for fresh dough).
- This will help to prevent the pizza from sticking and protect from the heat of the pizza stone. Semolina is a better choice than flour.
- Do an online search for “pizza semolina” for plenty of articles on this topic.
Shut the Grill Lid
- The pizza oven holds heat very well, but keeping the lid shut between placing and rotating the pizza will help to hold a more consistent temperature.
Practice
- Cooking pizza is somewhat of an art, expecially at high temperatures and so while hotter may seem better, it also comes with the significant risk of burning the base of pizza before the topping is cooked.
- Experience is required to achieve good results, so do some tests before cooking for friends and family!
Keep it Rotating
- The rear half of the pizza oven will be the temperature shown on the controller display while the front opening can be significantly cooler.
- The pizza will need to be rotated a number of times and may need to be lifted off the pizza stone towards the end of the cook to avoid burning the bottom while waiting the top to be crisped up perfectly.
Cooking Temperature
Cooking temperature will differ based on the type of pizza, thickness, amount of toppings etc, so some experimentation may be required based on your personal preference.
Below are temperature guides to start out with:
Pre-made (firm) pizza base
- Temperature: 200 – 240℃ (430 – 464℉)
- Cook time: 10 – 15 minutes
Fresh dough pizza
Medium Temperature (recommended)
- 250 – 300℃ (482 – 572℉)
- Cook time:5 – 7 minutes
High Temperature (proceed with caution!)
- 350 – 400℃ (662 – 752℉)
- Cook time: 2 – 4 minutes
Cleaning
- Wait for the grill and pizza oven to full cool down before removing from the grill.
Pizza Stone
- The pizza stone can stay hot for a long time. Do not remove while still hot.
- Scrape any food off the pizza peel and wipe with a wet cloth.
- Never pour water onto the stone while hot as it may crack.
- Never use detergent to clean the stone.
Stainless Steel Surfaces
- The pizza oven is made from stainless steel, but will discolour with use, changing to a golden/bronze colour with exposure to the smoke. This is normal.
- The stainless steel can be cleaned with warm soapy water and non abrasive kitchen cleaner (jif, bar keepers friend etc) as required.
